CHILDHOOD, REIMAGINED: BRIX JOURNEY LAUNCHES SICREAM

Before dessert became theatrical, technical and meticulously plated, it was simple.
It was a birthday cake shared with friends. Chocolate-coated ice cream bars on hot summer afternoons. Soft serve that melted faster than you could eat it. Family gatherings where sweets appeared at the centre of the table and everyone reached for a spoon.
This summer, BRIX Journey invites guests to revisit those moments with the launch of SICREAM, a new ice cream concept created by award-winning pastry chef Carmen Rueda Hernandez.
Inspired by the way “ice cream” is affectionately pronounced across the Gulf, SICREAM is a celebration of nostalgia through Chef Carmen’s lens. The concept draws inspiration from childhood memories, local flavours and the frozen treats many of us grew up with, reimagined through the creativity and craftsmanship that have made BRIX Journey one of the region’s most celebrated dessert destinations.
Available from Tuesday to Sunday from 3PM to 10PM, SICREAM transforms BRIX Journey’s terrace into a playful destination for families, friends and dessert lovers seeking a taste of simpler times.
The menu moves between familiar and unexpected. Guests can choose from classic flavours including Vanilla, Strawberry, Chocolate, Banana, Coconut and Dulce de Leche, alongside signature creations that reflect Chef Carmen’s imaginative approach to dessert.
Highlights include a Birthday Cake ice cream inspired by childhood celebrations, a SICREAM take on the iconic chocolate-coated ice cream bar, playful interpretations of the Banana Split and Tiramisu, Brown Butter ice Cream with Truffle & Caviar, as well as the Wagyu and Dates, a creative flavour that weave in regional influences and ingredients that feel deeply familiar to life in the Gulf.
While BRIX Journey has earned a reputation for pushing the boundaries of modern pastry, SICREAM embraces a different kind of luxury: simplicity.
“It’s easy to chase complexity,” says Chef Carmen Rueda Hernandez. “But some of the most powerful flavours are the ones that instantly transport you somewhere. A birthday party. A summer holiday. An afternoon with family. SICREAM is about those memories and the joy attached to them.”
Located within BRIX Journey, Dubai’s only dessert tasting experience, SICREAM offers a more playful extension of Chef Carmen’s creative universe. One where technique remains uncompromising, but the focus shifts from surprise to familiarity, comfort and emotion.
Recognised as Gault&Millau UAE Pastry Chef of the Year 2026, MENA’s 50 Best Pastry Chef 2025, and Tatler Middle East Pastry Chef of the Year 2025, Chef Carmen continues to redefine how people experience dessert. With SICREAM, she returns to where many dessert stories begin: childhood.
